Description

  • 34 lbs beef chuck roast, cut into 1.5-inch cubes
  • 1 cup soy sauce (low-sodium recommended)
  • 1/2 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 large red bell pepper, sliced into strips
  • 3 stalks green onions, chopped (white parts for cooking, green tops for garnish)
  • 2 tablespoons cornstarch
  • 1/2 cup water (divided: 2 tbsp for slurry, rest for consistency adjustment)

Instructions

  1. Trim excess hard fat from the beef and cut into uniform 1.5-inch cubes. Place beef cubes into the slow cooker.
  2. In a medium bowl, whisk together soy sauce, brown sugar, minced garlic, and grated ginger until the sugar is mostly dissolved.
  3. Pour the sauce mixture over the beef in the slow cooker and toss gently to coat.
  4. Add the sliced red bell pepper and white parts of the green onions to the slow cooker.
  5. Cover and cook on LOW for 6 to 8 hours until the beef is fork-tender.
  6. In a small bowl, mix cornstarch with 2 tablespoons of cold water to create a smooth slurry.
  7. Pour the cornstarch slurry into the slow cooker and stir gently. Cover and cook on HIGH for the last 30-45 minutes to thicken the sauce.
  8. Garnish with green onion tops and serve immediately over steamed white rice or noodles.

Notes

Cut beef against the grain for maximum tenderness. Do not lift the lid frequently during cooking. If the sauce is too thin, cook uncovered longer; if too thick, add a splash of water. For a gluten-free version, use tamari instead of soy sauce. Leftovers keep well in the fridge for up to 4 days or can be frozen for 3 months.
