Description

A quick and easy weeknight dinner featuring juicy chicken breasts or thighs cooked in a sweet and savory teriyaki sauce, finished with a crispy broil or air fry step for perfect texture.


Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Soy sauce (low-sodium recommended)
  • Brown sugar
  • Rice vinegar
  • Minced garlic
  • Fresh ginger, grated
  • Cornstarch
  • Sesame oil
  • Green onions, chopped
  • Sesame seeds
  • Water or chicken broth

Instructions

  1. Cut chicken into bite-sized pieces or leave whole if using breasts.
  2. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and sesame oil until sugar is dissolved.
  3. Place chicken in a slow cooker or Instant Pot. Pour sauce over chicken and stir to coat. Add a cup of water or broth if using a slow cooker.
  4. Cook on low for 6-7 hours or high for 3-4 hours in a slow cooker. If using an Instant Pot, cook on high pressure for 10 minutes with a quick release.
  5. Remove chicken from the pot. Mix cornstarch with cold water to create a slurry, then stir it into the hot sauce in the pot. Simmer for 2-3 minutes until thickened.
  6. Place chicken on a baking sheet lined with parchment paper. Brush generously with the thickened sauce.
  7. Broil on high for 3-5 minutes until edges are crispy and caramelized, watching closely to prevent burning. Alternatively, air fry at 400°F for 5-7 minutes.
  8. Garnish with chopped green onions and sesame seeds. Serve immediately over rice or noodles.

Notes

For best results, use fresh ginger and garlic. Pat chicken dry before broiling/air frying to ensure crispiness. If the sauce is too thin, simmer longer; if too thick, add a splash of water. Leftovers keep well in the fridge for up to 4 days.
