  • 1.5 lbs pork tenderloin, cut into 1-inch cubes
  • 2 large eggs, beaten
  • 1 cup cornstarch
  • 6 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 3 tbsp honey
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (optional)
  • 2 stalks green onions, sliced
  • Vegetable oil, for frying

Instructions

  1. Trim silver skin from pork tenderloin and cut into 1-inch cubes. Pat dry with paper towels.
  2. Set up a dredging station with beaten eggs in one shallow bowl and cornstarch (seasoned with salt and pepper) in another.
  3. Dip each pork cube in the egg wash, then roll in cornstarch, pressing gently to coat. Shake off excess and place on a rack.
  4. Heat 1/2 inch of vegetable oil in a skillet over medium-high heat. Fry pork pieces in batches for 2-3 minutes per side until golden brown and internal temperature reaches 145°F. Drain on paper towels.
  5. In a small saucepan, melt butter over low heat. Add minced garlic and cook for 30 seconds until fragrant. Stir in honey, soy sauce, and sesame oil. Simmer for 1 minute until slightly thickened.
  6. Add fried pork bites to the saucepan and toss gently to coat. Sprinkle with red pepper flakes and green onions. Serve immediately.

Notes

Do not overcrowd the pan to ensure the coating stays crispy. Pat the pork dry before coating to prevent steaming. For a healthier option, you can bake at 400°F for 15 minutes, though frying provides better crispiness. Reheat leftovers in an air fryer or oven to restore texture.
