Description

These oven-baked steak fries feature a crispy, golden exterior and fluffy interior, coated in a savory mixture of garlic, olive oil, and freshly grated Parmesan cheese for the ultimate comfort food side dish.

Ingredients

Scale
  • 3 large Russet potatoes
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced finely
  • 1/2 cup grated aged Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, thyme, basil)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and scrub potatoes; do not peel. Cut into 1/2-inch thick sticks, keeping sizes uniform.
  3. Pat potatoes thoroughly dry with paper towels to remove excess moisture.
  4. In a large bowl, toss dried potatoes with olive oil, minced garlic, dried herbs, salt, and pepper until evenly coated.
  5. Spread potatoes in a single layer on a baking sheet, ensuring they are not touching.
  6. Bake for 20 minutes, then remove and flip each fry.
  7. Sprinkle grated Parmesan cheese evenly over the fries.
  8. Return to oven and bake for another 10-15 minutes until golden brown and crispy.
  9. Remove from oven and let rest for 2 minutes before serving.

Notes

Ensure potatoes are completely dry before oiling to maximize crispiness. Do not overcrowd the baking sheet; use two sheets if necessary and rotate halfway through. Use freshly grated Parmesan for best melting and crust formation. For a vegan version, substitute Parmesan with nutritional yeast.
