  • 1 cup grated aged Parmigiano-Reggiano cheese
  • 45 cloves fresh garlic, minced finely
  • 1 tablespoon Italian seasoning (oregano, basil, thyme)
  • 1/2 cup almond flour (fine grind)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 lemon, cut into wedges for serving

Instructions

  1. Preheat oven to 400°F (200°C) and let it fully preheat for at least 10 minutes.
  2. Pat chicken thighs dry thoroughly with paper towels to ensure crispiness. Season both sides generously with salt and black pepper.
  3. In a shallow bowl, combine grated parmesan, almond flour, Italian seasoning, and minced garlic. Mix well.
  4. Brush the top side of each chicken thigh with olive oil, then press the oiled side firmly into the parmesan mixture to create a thick, even coating.
  5. Arrange chicken coated-side up on a baking sheet lined with parchment paper or a wire rack, leaving space between pieces.
  6. Bake for 20 minutes until the chicken starts to brown and cheese is bubbling.
  7. Switch oven to broil and broil for 2-3 minutes, watching closely, until the top is golden and crispy.
  8. Remove from oven and let rest for 5 minutes before serving with a squeeze of fresh lemon juice.

Notes

Ensure chicken is completely dry before coating to prevent steaming. Use freshly grated parmesan as pre-shredded cheese contains anti-caking agents that prevent proper melting. If chicken thighs are very thick, bake for an extra 5 minutes. Internal temperature should reach 165°F (74°C). Do not crowd the pan to allow air circulation.
