Crispy Cheddar Turkey Melt

Description

A quick and delicious grilled sandwich featuring smoked turkey, sharp cheddar, and caramelized onions on buttered sourdough bread, cooked to golden perfection.


Ingredients

  • 23 slices thick sourdough or rye bread
  • 810 ounces smoked turkey breast
  • 46 ounces sharp cheddar cheese, freshly grated
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon Dijon mustard
  • 1 medium yellow onion, thinly sliced
  • 1/2 teaspoon garlic powder
  • Black pepper, to taste
  • 1 teaspoon butter (for caramelizing onions)
  • Salt (for caramelizing onions)

Instructions

  1. Slice the onion into thin half-rings. Heat a small pan over medium-low heat with a teaspoon of butter. Add onions and a pinch of salt, cooking slowly for 8-10 minutes until soft and golden brown. Remove and set aside.
  2. Spread a thin layer of Dijon mustard on one side of each bread slice.
  3. Spread a generous layer of softened butter on the outside of all four bread slices.
  4. Place two slices of bread, butter-side down, in a cold heavy-bottomed skillet. Layer turkey on one slice, add cheddar cheese, top with caramelized onions, add a second layer of turkey and cheese, then close with the fourth slice of bread, butter-side up.
  5. Turn heat to medium-low. Cook for 3-4 minutes until the bottom is golden brown and crispy.
  6. Carefully flip the sandwich. Press down gently and cook for another 3-4 minutes. If cheese isn’t melted, add a splash of water and cover with a lid for 30 seconds.
  7. Remove from pan and let rest for 1-2 minutes. Slice diagonally and serve immediately.

Notes

Low and slow heat is key to prevent burning the bread before the cheese melts. Grate your own cheese to avoid anti-caking agents that hinder melting. Always soften butter before spreading. Let the sandwich rest before cutting to prevent cheese from sliding out.
