  • 2 mixed bell peppers (red, yellow, orange), cut into chunks
  • 1 red onion, cut into chunks
  • 2 tbsp vegetable oil (plus more for brushing)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup mayonnaise
  • 24 tbsp sriracha sauce (adjust to taste)
  • 12 tbsp honey
  • 1 tbsp lime juice (freshly squeezed)
  • 1 clove garlic, minced

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, toss chicken cubes with vegetable oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Thread chicken and vegetables onto skewers, alternating between ingredients and leaving small gaps for heat circulation.
  4. Preheat oven to 400°F (200°C). Place skewers on a wire rack set over a baking sheet.
  5. Brush skewers lightly with oil and bake for 15-20 minutes, flipping halfway through, until golden brown and cooked through.
  6. Alternatively, cook in an air fryer at 390°F (200°C) for 10-12 minutes, shaking halfway, or grill over medium-high heat for 12-15 minutes, turning frequently.
  7. While chicken cooks, whisk together mayonnaise, sriracha, honey, lime juice, and minced garlic in a small bowl to make the bang bang sauce.
  8. Drizzle the sauce generously over the cooked skewers.
  9. Garnish with sesame seeds and chopped green onions if desired, and serve immediately.

Notes

Chicken thighs are recommended over breasts to keep the meat juicy. Ensure vegetables are cut to the same size as the chicken for even cooking. The sauce can be made ahead and stored in the fridge for up to three days. For best results, do not crowd the baking sheet or air fryer basket to ensure crispiness.
