Ingredients
- 1 lb (450g) ground beef (80/20 lean preferred)
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 can (400ml) full-fat canned coconut milk
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 cup (120ml) low-sodium chicken or beef broth
- 2 cups fresh spinach or kale
- 1 tbsp coconut oil or olive oil
- Salt and black pepper to taste
Instructions
- Peel and dice sweet potatoes into 1/2-inch cubes. Dice onion and mince garlic.
- Heat coconut oil in a large skillet over medium heat. Add diced onion and a pinch of salt; cook for 3-4 minutes until translucent.
- Add minced garlic and cook for 30 seconds until fragrant.
- Increase heat to medium-high. Add ground beef, breaking it up with a spoon. Let it sit for a minute to brown, then cook until no longer pink (5-6 minutes). Drain excess fat if desired.
- Stir in cumin, coriander, and smoked paprika; cook for 1 minute to toast spices.
- Add diced sweet potatoes, coconut milk, and broth. Stir to combine, scraping up browned bits from the bottom of the pan.
- Bring to a gentle simmer, then reduce heat to medium-low. Cover and simmer for 10-12 minutes until potatoes are tender.
- Stir in spinach or kale and let wilt for 1-2 minutes.
- Season with salt and pepper to taste. Serve immediately.

Ensure sweet potatoes are cut uniformly for even cooking. Do not use cartoned coconut milk beverage; use full-fat canned milk for richness. The sauce should coat the back of a spoon.
