Description
A quick, healthy, and satisfying 15-minute meal featuring tender shrimp, rich avocado dressing, and fresh vegetables. Perfect for busy weeknights or meal prep.
Ingredients
Scale
- 1 lb medium or large shrimp, peeled and deveined
- 2 large ripe avocados
- 1/2 medium red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh cilantro, chopped
- Juice of 2–3 limes
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp chili flakes (optional)
- Salt and black pepper to taste
- 1 cup cooked quinoa or brown rice (optional base)
Instructions
- Rinse shrimp under cold water and pat dry. Season with salt, pepper, and half of the cumin. Let sit while prepping vegetables.
- Heat a large skillet over medium-high heat with a drizzle of olive oil. Add shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque. Remove from pan and set aside.
- Chop avocados into wedges, halve tomatoes, and slice red onion. Soak onion slices in ice water for 10 minutes to reduce sharpness, then drain.
- In a small bowl, mash one avocado with a fork until smooth. Stir in lime juice, remaining cumin, chili flakes, minced garlic, and olive oil. Season with salt and pepper.
- In a large mixing bowl, combine cooked shrimp, sliced avocado, tomatoes, red onion, and cilantro. Drizzle with avocado dressing and gently toss to coat.
- Serve immediately over cooked quinoa or rice, or on its own. Garnish with extra cilantro and a squeeze of fresh lime.
Notes
Do not overcook shrimp or they will become rubbery. To prevent avocado browning, toss with lime juice immediately after slicing. The flavors improve after sitting in the fridge for a few hours. Do not freeze this dish as the texture of the avocado and shrimp will suffer.
