Description
A quick and easy weeknight dinner that captures the rich, savory flavors of a Philadelphia cheesesteak without the heavy bread. Tender beef, caramelized onions, and peppers are served in a creamy provolone and cream cheese sauce.
Ingredients
- 1.5 lbs flank steak or sirloin, sliced thinly against the grain
- 1 large yellow onion, sliced into thin strips
- 1 medium green bell pepper, diced
- 8 oz cremini mushrooms, sliced
- 1/2 cup heavy cream
- 4 oz cream cheese, cut into cubes
- 1/2 cup beef broth, low-sodium preferred
- 1 cup provolone cheese, shredded
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp Worcestershire sauce (optional)
Instructions
- Take the steak out of the fridge and let it sit for 15 minutes. Pat dry with paper towels and slice thinly against the grain. Season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the beef in a single layer for 2-3 minutes until browned, flip and cook for another minute. Remove beef from the pan and set aside.
- Reduce heat to medium. Add onions and bell peppers to the same pan. Sauté for 5-7 minutes until softened and caramelized. Add mushrooms and garlic in the last 2 minutes and season with a pinch of salt.
- Pour in beef broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute. Reduce heat to low, add cream cheese cubes, and stir constantly until melted and the sauce is thick and glossy (2-3 minutes).
- Return the beef and any juices to the pan. Stir to coat in the sauce. Sprinkle shredded provolone over the top, cover with a lid, and let melt for 1-2 minutes. Stir gently to combine.
- Taste and adjust seasoning. Ladle into bowls and serve immediately.
Notes
Slice beef against the grain for tenderness. Pat beef dry before searing to ensure a good crust. Keep heat low when melting cream cheese to prevent the sauce from breaking. This recipe is naturally gluten-free if using gluten-free Worcestershire sauce. Can be served over cauliflower rice for a low-carb option.
