- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 4 cloves garlic, finely minced
- 1/2 tsp red pepper flakes
- 1/2 cup sun-dried tomatoes (packed in oil), chopped
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 tsp Italian seasoning
- Fresh basil, chopped
- Salt and black pepper to taste
Instructions
- Pat chicken breasts dry and season generously with salt, pepper, and a pinch of Italian seasoning.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove chicken and set aside.
- Reduce heat to medium. Add butter to the pot. Once melted, add garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
- Add chopped sun-dried tomatoes and their oil to the pot. Cook for 1 minute.
- Pour in chicken broth, scraping up browned bits from the bottom of the pot. Bring to a simmer.
- Return chicken to the pot. Reduce heat to low, cover, and simmer for 10-12 minutes until chicken reaches 165°F.
- Remove chicken, let rest, then shred or chop into bite-sized pieces.
- Stir in heavy cream and parmesan cheese. Whisk until smooth and melted. Do not boil.
- Add shredded chicken back to the sauce. Simmer for 2-3 minutes to meld flavors.
- Remove from heat. Stir in fresh basil. Adjust seasoning with salt and pepper. Serve immediately.
Notes
For a vegetarian version, swap chicken for mushrooms or chickpeas. To keep chicken tender, sear quickly and add back at the end. If soup is too thick, add extra broth; if too thin, simmer uncovered. Dairy-based soups may separate when frozen; reheat gently on the stove.
