Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, finely minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup sun-dried tomatoes (packed in oil), chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • Fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat chicken breasts dry and season generously with salt, pepper, and a pinch of Italian seasoning.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove chicken and set aside.
  3. Reduce heat to medium. Add butter to the pot. Once melted, add garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and their oil to the pot. Cook for 1 minute.
  5. Pour in chicken broth, scraping up browned bits from the bottom of the pot. Bring to a simmer.
  6. Return chicken to the pot. Reduce heat to low, cover, and simmer for 10-12 minutes until chicken reaches 165°F.
  7. Remove chicken, let rest, then shred or chop into bite-sized pieces.
  8. Stir in heavy cream and parmesan cheese. Whisk until smooth and melted. Do not boil.
  9. Add shredded chicken back to the sauce. Simmer for 2-3 minutes to meld flavors.
  10. Remove from heat. Stir in fresh basil. Adjust seasoning with salt and pepper. Serve immediately.

Notes

For a vegetarian version, swap chicken for mushrooms or chickpeas. To keep chicken tender, sear quickly and add back at the end. If soup is too thick, add extra broth; if too thin, simmer uncovered. Dairy-based soups may separate when frozen; reheat gently on the stove.
