  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons unsalted butter (divided)
  • Kosher salt and freshly cracked black pepper
  • 3 cloves fresh garlic, minced
  • ¼ cup low-sodium chicken broth
  • ½ cup heavy cream or plain Greek yogurt
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. Pat chicken breasts dry with paper towels. If thick, pound to ½-inch thickness. Season generously with salt and pepper.
  2. Heat olive oil and half the butter in a large skillet over medium-high heat. Once butter foams, add chicken. Sear undisturbed for 4-5 minutes until golden brown.
  3. Flip chicken and cook for another 4-5 minutes until internal temperature reaches 165°F. Remove chicken to a plate and tent with foil.
  4. Reduce heat to medium. Add remaining butter to the pan. Once melted, add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth to deglaze the pan, scraping up browned bits with a wooden spoon.
  6. Stir in heavy cream or Greek yogurt. Simmer gently for 2-3 minutes until sauce thickens slightly.
  7. Stir in fresh parsley, thyme, and chives. Remove pan from heat.
  8. Stir in lemon juice and adjust seasoning with salt and pepper to taste.
  9. Return chicken to the pan, spooning sauce over the top. Let sit for 1 minute to reheat. Serve immediately.

Notes

Do not overcrowd the pan; cook in batches if necessary to ensure proper searing. If using Greek yogurt, remove the pan from heat before adding to prevent curdling. Fresh herbs should be added at the end to preserve flavor and color. The chicken is done when it reaches an internal temperature of 165°F.
