  • 2 pounds Yukon Gold potatoes, peeled and sliced into 1/8 inch rounds
  • 1 pound 80/20 lean ground beef
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 cup heavy cream
  • 1.5 cups shredded cheddar cheese, divided
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Slice potatoes into thin, even rounds (approx. 1/8 inch thick).
  3. In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon (5-7 minutes). Drain excess grease, leaving about 1 teaspoon.
  4. Add diced onion to the beef and cook for 3 minutes until soft.
  5. Stir in minced garlic and cook for 30 seconds until fragrant.
  6. Add butter to the skillet. Once melted, sprinkle in flour and whisk constantly for 1-2 minutes to create a roux.
  7. Slowly pour in beef broth while whisking, then add heavy cream. Continue whisking until the sauce thickens and simmers. Season with salt, pepper, and parsley.
  8. Layer half of the potato slices in the bottom of the baking dish. Pour half the sauce over them. Add remaining potatoes and pour the rest of the sauce on top.
  9. Sprinkle 1 cup of cheddar cheese evenly over the top.
  10. Cover with foil and bake for 45 minutes. Remove foil and bake for another 15-20 minutes until potatoes are tender and top is golden.
  11. Let rest for 10 minutes before serving to allow sauce to set. Top with remaining cheese if desired.

Notes

For best results, slice potatoes uniformly using a mandoline. Do not skip the resting time, as the sauce needs to thicken. If the top isn’t browning after 60 minutes, broil for 2-3 minutes while watching closely. Leftovers can be stored in the fridge for up to 4 days.
