Creamy Grilled Shrimp Bowl: Lighter But Better

  • Author: abigail_patterson
  • Total Time: 20 minutes
  • Yield: 2 servings 1x

Description

A quick and satisfying bowl featuring char-grilled shrimp tossed in a tangy, herb-infused Greek yogurt sauce, served over crisp greens with fresh vegetables and feta cheese.

Ingredients

Scale
  • 1 lb large shrimp (21–25 count), peeled and deveined
  • 2 tablespoons extra virgin olive oil (divided)
  • 1 clove garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup plain Greek yogurt
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh dill or parsley, chopped
  • Mixed greens or arugula
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese

Instructions

  1. In a medium bowl, whisk together 2 tablespoons olive oil, minced garlic, smoked paprika, dried oregano, salt, and pepper. Toss shrimp in the mixture and let marinate for 10-15 minutes.
  2. In a small bowl, combine Greek yogurt, lemon zest, lemon juice, and chopped herbs. Whisk until smooth and set aside.
  3. Wash and dry greens. Dice cucumber and halve tomatoes. Slice red onion and let sit in lemon juice for a quick pickle if desired.
  4. Heat a skillet or grill pan over medium-high heat with a splash of olive oil. Add shrimp in a single layer and cook for 2 minutes until pink and charred. Flip and cook for another 1-2 minutes until opaque. Do not overcook.
  5. Place a bed of greens in a bowl. Top with warm shrimp, cucumber, tomatoes, and red onion. Drizzle generously with the yogurt sauce and crumble feta on top. Toss gently before serving.

Notes

Pat shrimp dry before marinating to ensure proper browning. Let the sauce rest for 10 minutes to allow flavors to infuse. For meal prep, store sauce and shrimp separately from greens to maintain crispness. If using frozen shrimp, thaw completely and pat very dry.
