  • 1.5 lbs steak (Sirloin, flank, or ribeye), cut into 1-inch cubes
  • 1 tbsp high smoke point oil (avocado or grapeseed)
  • 3 tbsp unsalted butter
  • 45 cloves garlic, minced
  • 1/2 cup low-sodium beef broth
  • 1 tsp Worcestershire sauce
  • 1 cup heavy cream
  • 1 tsp Dijon mustard
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Remove steak from fridge and let sit for 15-20 minutes to reach room temperature. Pat dry with paper towels.
  2. Cut steak into 1-inch uniform cubes. Season generously with salt and black pepper in a bowl and toss to coat.
  3. Heat a large skillet (preferably cast-iron or stainless steel) over medium-high heat. Add oil and heat until shimmering (about 2 minutes).
  4. Sear steak cubes in a single layer without overcrowding the pan (cook in batches if necessary). Cook undisturbed for 2-3 minutes until a brown crust forms, then toss and cook for another 2 minutes. Remove steak to a plate.
  5. Reduce heat to medium. Add butter to the same pan. Once melted, add garlic and sauté for 30-60 seconds until fragrant but not brown.
  6. Pour in beef broth and Worcestershire sauce. Use a wooden spoon to scrape up browned bits from the bottom of the pan. Simmer for 1 minute.
  7. Stir in heavy cream and Dijon mustard. Simmer gently for 2-3 minutes until the sauce thickens slightly.
  8. Return the steak and any accumulated juices to the pan. Toss to coat in the sauce and heat through for 1 minute.
  9. Remove from heat and stir in fresh parsley. Serve immediately.

Notes

Do not overcrowd the pan, as this will steam the meat instead of searing it. Ensure steak cubes are uniform in size for even cooking. Garlic burns quickly, so watch it closely. If the sauce is too thick, add a splash of broth; if too thin, simmer longer. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop with a splash of broth or milk. Do not freeze the finished dish as the sauce may separate.
