A hearty, one-pot beef soup featuring ground beef, potatoes, creamed corn, and heavy cream. It is a quick, comforting meal that balances rich flavors with simple preparation and minimal cleanup.

- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, peeled and diced
- 2 stalks celery, diced
- 2 medium Russet potatoes, peeled and diced
- 4 cups beef broth (low-sodium)
- 1 can creamed corn
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- Optional: Red pepper flakes or hot sauce for heat
Instructions
- Prep vegetables by washing, peeling, and dicing carrots and potatoes into small uniform cubes. Dice the onion and mince the garlic.
- Heat a large pot over medium-high heat. Add ground beef and break it up with a wooden spoon. Brown thoroughly for 5-7 minutes until no longer pink. Drain excess fat if desired.
- Reduce heat to medium. Add butter to the pot. Once melted, add onions, carrots, and celery. Sauté for 5 minutes until onions are translucent and carrots soften. Add garlic in the last minute.
- Pour in beef broth, scraping up browned bits from the bottom. Add diced potatoes, dried thyme, salt, and pepper. Stir well and bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
- Stir in creamed corn and heavy cream. Simmer uncovered for 5-10 minutes to allow flavors to meld and soup to thicken. Do not boil vigorously to prevent curdling.
- Taste and adjust seasoning with salt and pepper. Ladle into bowls, garnish with parsley, and serve immediately with crusty bread or cornbread.
Notes
For a smoother texture, mash a few potato cubes against the side of the pot before adding cream. Do not freeze this soup as the heavy cream may separate upon thawing. Leftovers store in the refrigerator for up to 4 days. Reheat gently on the stove.
