Instructions
- Soften the cream cheese by cutting it into cubes and letting it sit at room temperature for 15-20 minutes, or microwaving in short bursts until soft but not melted.
- In a medium mixing bowl, whisk the softened cream cheese and sour cream (or Greek yogurt) together using an electric mixer or fork until smooth and lump-free.
- Stir in the shredded cheddar cheese until evenly distributed.
- Add the drained corn, chopped jalapeños, and sliced green onions, folding gently with a spatula to coat without crushing the kernels.
- Sprinkle in cumin, garlic powder, salt, and black pepper. Taste and adjust seasoning as needed.
