Description

A quick and easy 10-minute game day snack featuring a rich blend of cream cheese, sharp cheddar, corn, and jalapeños for a perfect balance of creamy, spicy, and savory flavors.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1 can (15 oz) whole kernel corn, drained
  • 1/2 cup jalapeño peppers, finely chopped (with juice)
  • 1/4 cup green onions, sliced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 cup sour cream or Greek yogurt
  • Salt and black pepper, to taste

Instructions

  1. Soften the cream cheese by cutting it into cubes and letting it sit at room temperature for 15-20 minutes, or microwaving in short bursts until soft but not melted.
  2. In a medium mixing bowl, whisk the softened cream cheese and sour cream (or Greek yogurt) together using an electric mixer or fork until smooth and lump-free.
  3. Stir in the shredded cheddar cheese until evenly distributed.
  4. Add the drained corn, chopped jalapeños, and sliced green onions, folding gently with a spatula to coat without crushing the kernels.
  5. Sprinkle in cumin, garlic powder, salt, and black pepper. Taste and adjust seasoning as needed.
  6. Serve immediately at room temperature, or chill for 30 minutes to let flavors meld. Alternatively, heat in a slow cooker or oven at 350°F for 15-20 minutes until bubbly.

Notes

Ensure corn is well-drained to prevent a watery dip. Use room temperature ingredients for a smoother texture. For a milder dip, remove seeds from jalapeños. Do not freeze as dairy may separate.
