  • 1 can (28 oz) crushed tomatoes
  • 1 jar (24 oz) marinara sauce
  • 810 broken pieces of dry lasagna noodles
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup heavy cream or 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste

Instructions

  1. Heat a large Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, until no longer pink. Drain excess fat if necessary.
  2. Reduce heat to medium. Add diced onion to the pot with the beef and cook until translucent and soft. Add minced garlic and cook for 30 seconds until fragrant.
  3. Pour in chicken broth, crushed tomatoes, and marinara sauce. Stir in Italian seasoning and red pepper flakes. Bring to a gentle simmer and let bubble for 5 minutes to meld flavors.
  4. Break lasagna noodles into 2-inch pieces and add to the simmering soup. Stir to ensure noodles are submerged. Cover and cook for 8-10 minutes until noodles are tender, stirring occasionally.
  5. Remove pot from heat. Stir in heavy cream or cream cheese until fully dissolved. Taste and season with salt and black pepper as needed.
  6. Ladle soup into bowls. Top with shredded mozzarella cheese and fresh basil if desired. Serve immediately.
