Description

A slow-cooker beef and broccoli recipe that delivers tender, fall-apart beef in a rich, garlicky, and slightly sweet sauce with minimal prep time.

  • 34 lbs Beef Chuck Roast, trimmed and cut into 1-inch cubes
  • 34 cups Broccoli Florets
  • ½ cup Soy Sauce (low-sodium recommended)
  • 1 cup Chicken Broth (low-sodium)
  • 3 tablespoons Brown Sugar
  • 1 tablespoon Apple Cider Vinegar
  • 4 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, grated
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold Water (for slurry)
  • 1 teaspoon Sesame Oil
  • ½ teaspoon Red Pepper Flakes (optional)

Instructions

  1. Trim the beef chuck roast and cut it into 1-inch cubes. Place the beef cubes into a 6-quart slow cooker.
  2. In a medium bowl, whisk together the soy sauce, chicken broth, brown sugar, apple cider vinegar, minced garlic, grated ginger, and sesame oil until the brown sugar is mostly dissolved.
  3. Pour the sauce mixture over the beef in the slow cooker. Stir gently to coat the meat evenly. Add red pepper flakes if using.
  4. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender.
  5. About 30 minutes before serving, add the broccoli florets to the pot and stir them into the beef and sauce.
  6. In a small cup, mix the cornstarch with 2 tablespoons of cold water until smooth to create a slurry.
  7. Pour the slurry into the slow cooker and stir well. Cover and cook on high for an additional 15-20 minutes, until the sauce thickens and the broccoli is crisp-tender.
  8. Turn off the slow cooker and let it sit for 5 minutes before serving. Serve hot over steamed rice or cauliflower rice.
