A slow-cooker beef and broccoli recipe that delivers tender, fall-apart beef in a rich, garlicky, and slightly sweet sauce with minimal prep time.

- 3–4 lbs Beef Chuck Roast, trimmed and cut into 1-inch cubes
- 3–4 cups Broccoli Florets
- ½ cup Soy Sauce (low-sodium recommended)
- 1 cup Chicken Broth (low-sodium)
- 3 tablespoons Brown Sugar
- 1 tablespoon Apple Cider Vinegar
- 4 cloves Garlic, minced
- 1 tablespoon Fresh Ginger, grated
- 2 tablespoons Cornstarch
- 2 tablespoons Cold Water (for slurry)
- 1 teaspoon Sesame Oil
- ½ teaspoon Red Pepper Flakes (optional)
Instructions
- Trim the beef chuck roast and cut it into 1-inch cubes. Place the beef cubes into a 6-quart slow cooker.
- In a medium bowl, whisk together the soy sauce, chicken broth, brown sugar, apple cider vinegar, minced garlic, grated ginger, and sesame oil until the brown sugar is mostly dissolved.
- Pour the sauce mixture over the beef in the slow cooker. Stir gently to coat the meat evenly. Add red pepper flakes if using.
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender.
- About 30 minutes before serving, add the broccoli florets to the pot and stir them into the beef and sauce.
- In a small cup, mix the cornstarch with 2 tablespoons of cold water until smooth to create a slurry.
- Pour the slurry into the slow cooker and stir well. Cover and cook on high for an additional 15-20 minutes, until the sauce thickens and the broccoli is crisp-tender.
- Turn off the slow cooker and let it sit for 5 minutes before serving. Serve hot over steamed rice or cauliflower rice.
