Description

A quick, 20-minute healthy meal that recreates the rich, buttery, and garlicky flavor of the famous restaurant dish using simple pantry staples and brown butter.


Ingredients

  • 1.5 lbs large or extra-large shrimp, peeled and deveined
  • 6 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 2 tablespoons chicken broth
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. Pat shrimp completely dry with paper towels and season lightly with salt and black pepper.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of butter. Once foaming subsides, add shrimp in a single layer.
  3. Cook shrimp for 1-2 minutes per side until pink, then remove to a clean plate.
  4. Reduce heat to medium and add remaining 4 tablespoons of butter to the pan.
  5. Cook butter until it foams, settles, and turns golden amber with a nutty aroma (3-5 minutes).
  6. Add minced garlic and red pepper flakes, stirring constantly for 30 seconds.
  7. Deglaze the pan with white wine, scraping up browned bits.
  8. Add chicken broth and lemon juice, simmering for 1 minute until the sauce coats the back of a spoon.
  9. Remove pan from heat and gradually whisk in Parmesan cheese until smooth.
  10. Toss cooked shrimp back into the pan to coat in sauce and serve immediately with fresh parsley.

Notes

Ensure shrimp are very dry before cooking to achieve a good sear. Brown the butter carefully as it can burn quickly. Remove pan from heat before adding cheese to prevent separation. Do not freeze leftovers as shrimp texture will become rubbery.
