These homemade McGriddle bites combine fluffy pancake batter, smoky bacon, and maple syrup in a quick, easy-to-make breakfast treat that captures the nostalgic taste of McDonald’s without the drive-thru wait.

- 1 cup pancake mix (such as Bisquick or Krusteaz)
- 2 large eggs, room temperature
- 1/2 cup whole milk
- 1 tablespoon maple syrup (for batter)
- 1 teaspoon vanilla extract
- Thick-cut bacon strips (enough for desired number of bites)
- Additional maple syrup (for glazing)
Instructions
- Cook bacon strips until firm but still flexible. Drain on paper towels and cut into small pieces.
- In a medium bowl, whisk together pancake mix, eggs, milk, vanilla extract, and 1 tablespoon of maple syrup until just combined. Do not overmix.
- Preheat a non-stick skillet over medium-low heat for about 2 minutes.
- Place a piece of bacon in the bottom of each mini muffin cup (or center of skillet for freeform method). Pour batter over the bacon, filling cups 3/4 full.
- Cook on medium-low heat for 2-3 minutes until bubbles form and edges are set.
- Carefully flip the bites and cook for another 1-2 minutes until golden brown on both sides.
- While hot, brush the tops generously with additional maple syrup.
- Serve immediately.
Notes
Keep heat on medium-low to prevent burning the sugar in the syrup. Do not overmix the batter to ensure fluffy pancakes. If using a muffin pan, ensure the pan is greased or use silicone cups for easy removal. These can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
