Description

Soft, chewy, and incredibly buttery homemade sugar cookies that mimic the cloud-like texture of Crumbl bakery cookies, topped with a sweet and tangy pink cream cheese frosting.

  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 ½ cups (300g) granulated sugar
  • ½ cup (100g) light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla bean paste (or pure vanilla extract)
  • 3 ½ cups (440g) all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 4 oz (113g) cream cheese, softened
  • 45 cups powdered sugar, sifted
  • 23 tablespoons heavy cream
  • Pink gel food coloring

Instructions

  1. In a large bowl, whisk together the flour, cornstarch, baking powder, and salt. Set aside.
  2. In the bowl of a stand mixer fitted with a paddle attachment, beat the softened butter on medium speed until smooth and creamy (about 2 minutes).
  3. Add the granulated sugar and brown sugar to the butter. Beat on medium-high speed for 3-4 minutes until pale and fluffy. Scrape down the sides of the bowl.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla bean paste. Scrape the bowl again.
  5. Reduce mixer speed to low. Gradually add the flour mixture to the wet ingredients. Mix just until the flour disappears (1-2 minutes). Do not overmix.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 2 hours, or up to 24 hours.
  7. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  8. Use an ice cream scoop or tablespoon to portion dough onto baking sheets, leaving 2 inches between cookies.
  9. Bake for 10-12 minutes. Edges should be just starting to turn golden, but centers should look soft. Do not overbake.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. In a clean bowl, beat softened cream cheese until smooth. Add powdered sugar one cup at a time on low speed.
  12. Add heavy cream and vanilla. Beat on high speed for 2-3 minutes until fluffy. Add pink gel food coloring and mix until desired color is reached.
  13. Once cookies are completely cool, place a dollop of frosting on top and swirl with a knife or spatula.

Notes

Ensure butter is softened but not melted. Chill dough thoroughly to prevent excessive spreading. Use gel food coloring for vibrant color without thinning the frosting. Cool cookies completely before frosting to prevent melting.
