A quick and easy weeknight dinner that combines the bold flavors of a classic Philly cheesesteak with creamy mac and cheese. This one-pot meal is hearty, savory, and perfect for busy families.

- 8 ounces (225 grams) elbow macaroni
- 1 to 1.5 pounds (450–680 grams) flank steak, sliced thin
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 2 cups shredded provolone cheese
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1.5 cups (360 ml) whole milk
- 1–2 teaspoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Boil elbow macaroni in salted water according to package directions until al dente. Drain and set aside (do not rinse).
- Heat a large skillet over medium-high heat with 1 tablespoon of butter. Sauté diced onions and green bell peppers for 5-7 minutes until soft and slightly browned. Remove vegetables and set aside.
- In the same skillet, add remaining 1 tablespoon of butter and increase heat to high. Sear sliced flank steak in batches for 1-2 minutes per side until medium-rare to medium. Remove steak, chop into bite-sized pieces, and set aside with vegetables.
- Reduce heat to medium-low. Add butter to the skillet and sprinkle in flour, whisking constantly for 1-2 minutes until light golden.
- Slowly pour in milk while whisking continuously until the sauce thickens and becomes smooth (3-4 minutes). Stir in Worcestershire sauce, garlic powder, salt, and pepper.
- Add cooked pasta, steak, and vegetables to the sauce. Stir in half of the provolone cheese until melted and creamy.
- Taste and adjust seasoning. Serve immediately topped with remaining cheese, or transfer to a baking dish and broil for 2-3 minutes for a crispy top.
Notes
Slice steak against the grain and freeze for 15-20 minutes before cutting for easier slicing. Use fresh shredded provolone rather than pre-shredded for better melting. If the sauce is too thick, add a splash of milk. For a gluten-free version, use gluten-free pasta and flour.
