Best Sticky Garlic Chicken Noodles: Easy 20-Minute Dinner

  • Author: abigail_patterson
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Description

A quick and flavorful weeknight meal featuring tender chicken and noodles coated in a sweet, savory, and garlicky sticky glaze. This dish is ready in under 20 minutes using simple pantry ingredients.

Ingredients

Scale
  • 1 pound chicken breast or thighs, cut into bite-sized pieces
  • 8 ounces dried noodles (ramen, spaghetti, or udon)
  • 2 tablespoons vegetable oil (divided)
  • 6–8 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1/4 cup chicken broth
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 2 stalks green onions, sliced
  • 1 teaspoon sesame seeds
  • Red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Pat chicken pieces dry with paper towels and season with a pinch of salt and pepper.
  2. Bring a large pot of salted water to a boil. Cook noodles according to package instructions (3-5 minutes). Drain, rinse with cold water, and toss with a little oil to prevent sticking.
  3. In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, rice vinegar, chicken broth, and the cornstarch mixture until dissolved.
  4. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Sear chicken in a single layer for 3-4 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  5. In the same pan, add remaining oil if needed. Sauté minced garlic and grated ginger for 30 seconds to 1 minute until fragrant, being careful not to burn.
  6. Pour the sauce mixture into the pan with the garlic. Stir constantly until the sauce thickens and becomes glossy, coating the back of a spoon (1-2 minutes).
  7. Return chicken to the pan and add cooked noodles. Toss everything together until noodles are evenly coated in the sticky sauce.
  8. Remove from heat, garnish with green onions and sesame seeds, and serve immediately.

Notes

Do not burn the garlic as it turns bitter quickly. Ensure chicken is not overcrowded in the pan to allow for proper searing. If the sauce is too thick, add a splash of water or broth. For a vegetarian option, swap chicken for firm tofu and use mushroom sauce instead of oyster sauce.
