Instructions

  1. Prepare four to five 16-ounce mason jars, ensuring they are clean and dry.
  2. In a medium bowl, combine 1 cup of rolled oats and 1 tablespoon of chia seeds for each jar. Whisk to distribute chia seeds evenly.
  3. In a separate large bowl or jug, whisk together 1/2 cup milk, 1/4 cup Greek yogurt, 1 tablespoon honey, 1/2 teaspoon vanilla extract, and a pinch of salt until smooth.
  4. Pour the wet mixture over the dry oats in each jar. Scrape down the sides to ensure all ingredients are included.
  5. Stir the contents of each jar vigorously to ensure no dry pockets of oats remain.
  6. Let the jars sit at room temperature for 10 minutes to allow chia seeds to start absorbing liquid.
  7. Seal the jars with lids and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  8. When ready to eat, remove a jar, give it a good stir, and add desired toppings like fresh fruit, nuts, or nut butter. Serve cold or warm in the microwave for 30 seconds.

Notes

Avoid using quick oats as they turn to mush; use old-fashioned rolled oats. If the oats are too thick in the morning, add a splash of milk. Add crunchy toppings just before eating to prevent sogginess. For vegan versions, swap dairy milk and yogurt for plant-based alternatives.
