Description
Moist, rich, and wholesome double chocolate chip muffins made with oat flour and Greek yogurt for a healthy breakfast treat that fuels you without the sugar crash.
Ingredients
- 1 cup (90g) Old-Fashioned Rolled Oats (blended into flour)
- 1 cup (120g) Whole Wheat Flour
- 3 tablespoons (15g) Unsweetened Cocoa Powder
- 1 ½ teaspoons Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- ½ teaspoon Cinnamon
- ½ cup (120g) Plain Greek Yogurt
- 2 large Eggs, room temperature
- ¼ cup (80g) Honey
- ¼ cup (60ml) Vegetable Oil
- 1 teaspoon Vanilla Extract
- ½ cup (85g) Dark Chocolate Chips
- ½ cup (85g) Semi-Sweet Chocolate Chips
Instructions
- Preheat oven to 350°F (175°C).
- If using rolled oats, pulse 1 cup in a food processor until it resembles fine flour. Set aside.
- In a large bowl, whisk together oat flour, whole wheat flour, cocoa powder, baking powder, baking soda, salt, and cinnamon.
- In a separate medium bowl, whisk Greek yogurt, eggs, honey, oil, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and gently fold together until just moistened. Do not overmix.
- Gently fold in chocolate chips, reserving a small handful for topping.
- Grease a 12-cup muffin tin or line with paper liners. Divide batter evenly among cups, filling about 2/3 full.
- Sprinkle reserved chocolate chips on top.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the batter to avoid tough muffins. Ensure eggs and yogurt are at room temperature for better emulsification. Check muffins at 18 minutes; cover with foil if tops brown too quickly. Can be made vegan by using flax eggs, maple syrup, and coconut yogurt. Can be made gluten-free by using certified GF oat and almond flour.
