- Fresh ginger, grated

- Rice vinegar
- Cornstarch mixed with water (slurry)

Instructions
- Pat chicken thighs dry with paper towels and season lightly with salt and pepper.
- In a small bowl, whisk together bourbon, soy sauce, brown sugar, rice vinegar, grated ginger, and minced garlic until sugar is dissolved.
- Heat a large skillet over medium-high heat and add oil until it shimmers.
