  • 1/2 cup heavy cream (or whole milk)
  • 1 lb cooked breakfast sausage, chorizo, bacon, or ham
  • 2 cups shredded cheese (Mexican blend or cheddar)
  • 12 large flour tortillas
  • Salt and black pepper to taste
  • 1 pinch garlic powder
  • Salsa and avocado for serving

Instructions

  1. Preheat oven to 375°F (190°C) and line two large rimmed baking sheets with parchment paper.
  2. In a large mixing bowl, whisk 12 eggs with heavy cream, salt, pepper, and garlic powder until pale and frothy.
  3. Ensure breakfast meat is cooked, crumbled, and drained of excess grease. Have shredded cheese ready.
  4. Lay tortillas on a clean surface. Spoon about 1/3 cup of egg mixture onto the center of each tortilla.
  5. Top the egg mixture with a generous handful of cheese and the cooked meat. Avoid overfilling.
  6. Fold the bottom of the tortilla up over the filling, fold in the sides, and roll tightly towards the top.
  7. Place tacos seam-side down on the prepared baking sheets, ensuring they are not touching.

Notes
