Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken breast, cut into bite-sized chunks
  • 1/4 cup (60ml) soy sauce (use tamari for gluten-free)
  • 1/4 cup (60ml) white vinegar
  • 6 cloves garlic, minced
  • 1 large yellow onion, sliced
  • 1 teaspoon black pepper, freshly cracked
  • 1 tablespoon olive oil
  • 2 medium-large zucchini, halved lengthwise and sliced into half-moons
  • 1/2 teaspoon salt, to taste
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. In a mixing bowl, combine chicken chunks, soy sauce, vinegar, minced garlic, sliced onions, and black pepper. Toss to coat and let marinate for at least 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and onions (reserve the marinade) and sear for 3-4 minutes until golden brown. Cook in batches if necessary.
  3. Pour in the reserved marinade, reduce heat to medium-low, cover, and simmer for 5 minutes until chicken is cooked through and sauce thickens.
  4. Remove chicken from the pan and set aside. In the same pan, add sliced zucchini and sauté for 2-3 minutes until tender-crisp. Season with salt.
  5. Return chicken to the pan with the zucchini, toss gently to combine, garnish with fresh cilantro or green onions, and serve immediately.

Notes

For a gluten-free option, use tamari or certified gluten-free soy sauce. Zucchini can be swapped for eggplant, though zucchini holds up better. Do not freeze leftovers as zucchini texture may change. Marinate chicken up to 24 hours in advance for deeper flavor.
